Ingredients

  • 6 eggs

  • 6 slices of ham

  • 1 cup shredded cheese of choice

  • Chopped herbs

  • Chopped green onions

  • Chopped peppers

  • 1 cup cooked sausage or bacon

  • 1 pinch salt or favorite spice

  • 1 pinch cayenne pepper


How to Cook

  1. Place a slice of ham in each greased muffin tin cup.

  2. Scramble the eggs and pour into each cup.

  3. Sprinkle with cheese, sausage, and other toppings.

  4. Bake at 350°F for 20–25 minutes until set.

Makes 6 — great for meal prep!
